I think the key is knowing which of the thirteen ribs the meat comes from. In the UK, the prime meat is from ribs 2 to 5 in the chuck and ribs 6 to 8 in the rib section. Meat beyond the 9th rib tends to be mostly fat, especially in Irish cattle.
