Why do we make this product?
We were looking for a bit thicker cut of beef that is both tender and forgiving for grilling, and without the high cost associated with traditional cuts like fillet or ribeye. It also needs to contain rich marnling and is suitable for entertaining friends.
Short ribs provide unique characteristics that cannot be found in other cuts of beef. They have a long shape, exceptional marbling, and a balanced beef flavor that is not overpowering. These qualities make them an ideal choice for grilling or Korean Barbecue.
Our short ribs are sliced to a thickness of 3.5mm, which allows "straight to grill" without the need for tenderizing sauces or other tenderizing methods. The caramelization process, known to impart a rich buttery flavor and beautiful brown color, is enhanced by the marbling and fat content of this premium cut. We selected the beef with hgh marbling to make this product, when cooked properly, the beef develops a crispy brown edge that adds to its delicious taste.
