Best to defrost the whole pack unopened in a fridge for 12 to 24 hours before usage, this would keep the beef cold enough to stay in shape and less meat juice is formed. Or immerse the whole pack un-opened in cold water for 15 to 20 mins for faster defrost result.
To achieve the bright red colour of the beef, open the pack to let the meat in touch with air inside the fridge, sit it there for 15mins to 45mins and it will become bright red.
