Our Choice Boneless Short Rib BBQ slices are cut to a thicker ~3.5mm thickness, allowing them to sear beautifully while staying tender and juicy. This grade offers a clean, balanced beef flavour with gentle marbling — ideal for everyday Korean BBQ and yakiniku at home.

Why do we make this product?
When Ruston was founded, customers expressed a demand for a beef cut suitable for grilling and Korean BBQ. The short ribs were determined to be the most ideal option for this purpose, due to their elongated shape, rich flavor, and higher fat content.
Ruston aimed to create a basic product that was easy to manage during cooking and resulted in a tender, juicy texture. After extensive testing, it was determined that slicing the ribs to a thickness of 3.5mm and half a length provided the perfect balance in all aspects.
The original boneless short rib BBQ cuts are made with high-quality Irish beef, ensuring consistent excellence. This product is perfect for grilling with just a simple seasoning of salt and black pepper, but also works well when marinated with a variety of sauces.
My personal favorite method of cooking this product involves grilling the meat to 70% cooked and then using a blow torch to crisp up the silver skin, resulting in a deliciously crispy texture.

Preparation Tips:
- Best to defrost the whole pack unopened in a fridge for 12 to 24 hours before usage, this would keep the beef cold enough to stay in shape and less meat juice is formed. Or immerse the whole pack un-opened in cold water for 15 to 20 mins for faster defrost result.
- To achieve the bright red colour of the beef, open the pack to let the meat in touch with air inside the fridge, sit it there for 15mins to 45mins and it will become bright red.
Instructions:
- Store at -18˚C or colder.
- Meat must be cooked thoroughly.
- Use within 72 hours of opening.
