This premium cut is a favourite among food lovers for Korean BBQ, yakiniku, grilling, or quick searing. Carefully trimmed to remove tougher sections, only the tender, springy centre of the tongue is used, ensuring exceptional texture and clean, rich flavour. Each slice is cut to an ideal 3.5mm thickness, perfect for high-heat grilling that delivers beautiful caramelisation with every bite.
The centre of the ox tongue has a unique texture unlike any other beef cut — pale in colour, mildly rich, and pleasantly spongy yet tender. Because only around 13–20% of a whole tongue yields this centre section, it is commonly served as a premium dish in specialist restaurants.

Why We Do This Product
Seasoned meat enthusiasts know that the heart of the ox tongue is truly special. It offers a unique combination of springy tenderness and a clean, gently sweet beef flavour that no other cut can replicate. This distinctive texture is best revealed through high-heat grilling, where the surface caramelises beautifully while the inside remains soft and succulent.
At Ruston, we wanted to bring this exceptional cut to the UK in its best possible form. Each tongue is carefully and extensively trimmed, removing most of the darker, firmer sections and leaving predominantly the pale, tender centre for slicing. This process is highly labour-intensive and results in significant trimming loss, but it allows us to deliver a consistently premium eating experience. It’s a commitment we’re proud to make — because some cuts are simply worth the extra care.

Preparation Tips:
- Best to defrost the whole pack unopened in a fridge for 12 to 24 hours before usage, this would keep the beef cold enough to stay in shape and less meat juice is formed. Or immerse the whole pack un-opened in cold water for 15 to 20 mins for faster defrost result.
- To achieve the bright red colour of the beef, open the pack to let the meat in touch with air inside the fridge, sit it there for 15mins to 45mins and it will become bright red.
Instructions:
- Store at -18˚C or colder.
- Meat must be cooked thoroughly.
- Use within 72 hours of opening.
